One thing that I really miss on a raw vegan diet is that crunchiness that you get in chips. So, I tried making many different chips, but corn chips remain my absolute favorite. They are really easy to make, too! You only need one ingredient. Corn, of course. 😉 But it has to be sweet corn, not mature. Because only sweet corn is good to eat raw. It doesn’t have a lot of starch yet, so it’s actually really delicious. It’s best if you use fresh corn, but frozen will do as well. Actually, I use frozen corn most of the time, because we only get fresh for a very short period of time here. I am lucky, because the corn that I buy, is actually raw – most of them are steamed. I love eating them just like that, but they are also amazing with raw chili or guacamole. Click here to see the recipe for the raw chili below. And guys… the CRUNCH … is amazing! You will love it.
Raw Corn Chips Recipe
- 2 cups sweet corn
- Put the corn in the blender and blend it until creamy. Then put some non-stick paper on the dehydrator tray and spread the corn mixture on top of it.
- Put it in the dehydrator at 46°C (115°F) for about 8-10 hours.
- After about 4 hours take it out and score it, so it will be easier to break it apart later. Then put it back to the dehyrator for another 4-6 hours or until crispy.
- That’s it!
So, tell me in the comments below, have you ever tried eating raw sweet corn? I actually plant it in my garden every year, because I love it so much. (But one time, the birds ate it all before it even got ripe, grrr.) Enjoy your day,
